Ingredients
1 quart oil for frying
4 large eggs
2 pounds bulk pork sausage
1 cup all-purpose flour
4 large eggs, beaten
4 cups dried bread crumbs, seasoned
Directions
Preheat the oven to 350 degrees F (175 degrees C). Heat oil in a deep-fryer to 375 degrees F (190 degrees C).
Place eggs in a saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.
Flatten sausage and make a patty to surround each egg. Very lightly flour the outer sausage layer then coat with beaten egg. Roll in bread crumbs to cover evenly.
Deep-fry prepared eggs until golden brown while making sure each side is well cooked. Bake in the preheated oven for 10 minutes.
Cut in half and serve.

4 slices bacon
1 onion
3 jalapeno peppers
1 10-ounce can of diced tomatoes and chilies
1 1/2 cups shredded cheese
8 eggs
salt and pepper
8 small flour tortillas
Instructions:
Heat dutch oven to about 375 degrees for Frying.
Cut bacon into small pieces and fry until well done.
Dice onion.
Remove stem and seeds from jalapenos and dice them into small pieces.
Reduce heat under the dutch oven to about 300 degrees.
Add onion and jalapenos, and stir for 5 minutes.
Add undrained can of tomatoes, and stir for 10 minutes.
Sprinkle cheese over mixture.
Crack eggs over cheese, distributing them evenly.
Break the yolks, if preferred.
Season with salt and pepper.
Put lid on dutch oven and move some of the heat to the lid to Bake at about 350 degrees for about 15 minutes, until eggs are firm.
When eggs are firm, lay a stack of tortillas on eggs.

Freshly ground black pepper
1 lb. refrigerated hash browns (thawed if frozen)
1 c. chopped ham
2 c. shredded Cheddar
Butter, for foil
Chopped fresh chives, for garnish
DIRECTIONS
In a large resealable plastic bag, crack eggs, add milk, and season with salt and pepper. Stir in hash browns, ham, and cheese.
Butter four squares of aluminum foil and divide mixture among foil. Fold tightly and seal.
Place packets over campfire or grill and cook until eggs are cooked and hash browns tender and crispy, about 10 minutes.
Garnish with chives and serve.

1 lb cheddar cheese
12 eggs
1 qt milk
1-1/2 tsp dry mustard

Instructions:
Spread butter all over the inside of the dutch oven.
Tear bread into pieces.
Break sausage into pieces.
Grate cheese.
In a bowl, beat eggs, milk, dry mustard, and salt.
Layer the bread, sausage, and eggs into the dutch oven.
Cover and Bake at 350 degrees for 20-25 minutes.
Pour cheese over top of casserole.
Bake another 10-15 minutes until cheese forms a light-brown crust on top of cooked eggs.
Makes about 8 servings.

Ingredients:
2 lb breakfast sausage
2 onions
2 green peppers
24 eggs
2 Tbsp garlic powder
2 Tbsp dried onion
2 Tbsp chil powder
16 soft tortillas
3 C shredded cheese (cheddar, colby, jack, whatever)
3 C salsa
Instructions:
Chop onions and green peppers.
Heat dutch oven to 350 degrees and Fry sausage, pepper, and onion.
Remove from dutch oven into pot with lid, leaving grease behind.
(if there is a lot of grease, you may remove some of it but leave about 1/2 cup)
Mix eggs, garlic, onion, and chili powder.
Fry in dutch oven, scrambling until cooked.
Remove eggs into pot and mix with sausage.
Place about 1/3 cup egg & sausage mixture onto each tortilla.
Add cheese, roll up, and fold over ends.
Lay 5 in dutch oven, then make second layer on top, then third layer.
Put lid on dutch oven and Bake 10 to 15 minutes at 350 degrees.
Serves 8 with salsa.

Ingredients:
6 eggs
1.5 cups flour
1.5 cups milk
1 tsp salt
3/4 stick of butter
2 apples (granny smith)
3 Tbsp cinnamon
1/2 cup sugar
syrup, jelly, powdered sugar, or other topping
Instructions:
Place dutch oven on a few coals to warm.
Whip eggs in bowl.
Stir milk, flour, and salt into eggs.
Put sugar and cinnamon in baggie.
Melt butter in low-heated dutch oven. Swirl butter around to coat the dutch oven.
Cut applies in half and remove seeds and stem.
Slice apples as thinly as possible.
Put each apple slice in baggie and shake to coat with cinnamon and sugar.
Cover bottom of dutch oven with coated apple slices.
If there is sugar and cinnamon left over, you can spread it over the apple slices in the dutch oven.
Pour batter over apple slices.
Bake at 350 degrees for 30 minutes.
Cut into center of Apple Fluff with a knife to check for doneness.
Bake until the batter is cooked firm throughout.
When served, top with syrup, jelly, peanut butter, or powdered sugar.
Serves 6 to 8.

1 (8 ounce) package French onion dip
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper

1 (16 ounce) package frozen hash brown potatoes, thawed
2 cups shredded Cheddar cheese, divided
Directions
Preheat oven to 350 degrees F (175 degrees C).
Crumble pork sausage into a large skillet over medium-high heat; cook and stir until no longer pink, 7 to 10 minutes. Drain and discard any excess grease. Return skillet to heat; add cream of mushroom soup, French onion dip, green bell pepper, red bell pepper, and onion. Fold hash brown potatoes and 1 cup Cheddar cheese into the mixture; bring to a simmer.
Transfer sausage mixture to a 9x11-inch casserole dish; top with 1 cup Cheddar cheese. Cover dish with aluminum foil.
Bake in preheated oven for 30 minutes. Remove foil and continue baking until beginning to brown around the edges, about 15 minutes more.

1/2 cup chopped onion
3 cloves garlic, minced
1 (14-1/2-ounce) can diced tomatoes, drained
1 (4-ounce) can diced green chilies, drained
2 teaspoons chili powder
1 teaspoon salt
10 eggs
1 (10-1/2-ounce) can condensed cream of chicken soup
2 cups milk
Directions
oat a 9- x 13-inch baking dish with cooking spray. Place bread cubes, tortilla strips, chicken, and 2 cups cheese in baking dish; toss together until well blended.
In a large skillet over medium-high heat, heat oil; saute bell pepper, onion, and garlic 5 to 7 minutes, or until soft. Stir in tomatoes, chilies, chili powder, and salt and cook 5 minutes, or until heated through.
In a large bowl, combine eggs, soup, and milk; mix well. Pour over bread mixture, then spoon vegetable mixture on top. Cover and refrigerate 4 hours, or overnight.
Preheat oven to 325 degrees F. Uncover baking dish, sprinkle remaining cheese on top, and bake 55 to 60 minutes, or until set in center.

1 can large, flaky biscuits (such as Grands)
½ pound ground breakfast sausage
3 Tablespoons flour
½ teaspoon salt
½ teaspoon black pepper
2 and ½ cups milk
Instructions
Preheat oven to 400 degrees (F).
Prepare a small casserole dish (approximately 7x10) with cooking spray. Set aside.
Open biscuits, and cut biscuits into quarters.
Layer half of the quarters in prepared pan.
Bake for 10 minutes.
Meanwhile, prepare gravy.
In a heavy skillet, brown the ground breakfast sausage over medium high heat until fully cooked.
Sprinkle the cooked sausage with 3 Tablespoons of flour.
Use a wooden spoon to stir flour into sausage until completely absorbed.
Lower heat to medium, and cook flour/sausage mixture for 3-5 minutes, stirring frequently.
Add milk, and stir to combine.
Add salt and black pepper.
Stir frequently until mixture comes to a slight boil.
Taste, and adjust seasonings as desired. (I usually add more black pepper)
If the gravy is too thick, add a bit more milk. You want the gravy to be thickened but not too thick, not "globby," it should still be slightly runny.
Pour gravy over the cooked biscuits.
Layer the remaining uncooked, quartered biscuits over the gravy.
Place casserole dish on a baking sheet, and bake for 20-25 minutes or until golden brown. If they start to over-brown, you can cover with foil for the last 10 minutes or so.
Serve immediately.

1 cup peanut butter
1 egg
1 tablespoon vegetable oil
Directions
Sift flour, sugar, baking powder, and salt together in a bowl.
Combine milk, peanut butter, egg, and oil in a large bowl. Fold in the flour mixture gently until batter is evenly mixed.
Heat a lightly oiled griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, about 2 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
